INGREDIENTS

1 cup California red seedless grapes

1 tsp grapeseed oil

2 whole Avocado
-
2 tbsp 100% Lime Juice

1/4 cup Red Onion
-
1 Jalapeno Pepper
-
3 tbsp fresh cilantro
-
1 garlic clove
-
1/2 tsp sea salt
-
1/4 tsp ground cumin
-
1/4 cup Shelled Pistachios

TIP: You can use extra-virgin olive oil in place of the grapeseed oil and you can use ground coriander in place of cumin, if you like.

Preheat the oven to 450°F. Toss the fresh grapes with the oil and roast on a small baking pan until softened and caramelized, about 15 minutes. Set aside for at least 5 minutes to cool.

Gently stir together the grapes, avocados, lime juice, onion, jalapeño, cilantro, garlic, salt, and coriander in a medium bowl until just combined.

Cover and chill until ready to serve. Stir in the pistachios at serving.
