The vibrant color comes from the roasted carrots, which also adds a depth of flavor. For even more flavor, season the carrots with fresh rosemary or thyme or play around with the spices, depending on what you’re serving it with.

1 lb Whole Carrots

1/3 cup Olive Oil, Extra Virgin

1/2 tbsp Ground Cumin

1 tsp Red Pepper Flakes

1 garlic clove

2 tbsp Tahini
-
1/2 cup water

1 pinch Salt
DIRECTIONS

Preheat the oven to 350 degrees.

On a baking sheet, toss the carrots with 2 tablespoons olive oil and the salt, cumin and pepper flakes.

Cook until soft and lightly browned, about 20 minutes.

In a blender, combine the carrots and 1/4 cup olive oil and remaining ingredients until smooth. Continue to add water until you reach the desired consistency.

Serve with pita chips, vegetables or use as a spread.
