Roasted Chicken Salad with Almonds & Cherries

This roasted chicken salad with almonds and cherries makes for a satisfying meal in under 30 minutes. Containing chicken breast, it is a flavorful protein-filled meal. Dried cherries and low fat yogurt add an unexpected taste, and the almonds contain lots of healthy fats and fiber.

INGREDIENTS

SERVES 4

  • 2 cups Chicken Breast
  • 1/2 cup Almonds
  • 1/3 cup Celery
  • 1/4 cup dried cherries
  • 6 oz Plain Lowfat Yogurt
  • 2 tbsp Reduced Fat Mayonnaise
  • 1 tbsp Lemon Juice
  • 2 tsp Organic Dijon Mustard, Gluten free
  • 1/4 tsp Poultry Seasoning
  • 1 dash salt and pepper

DIRECTIONS

1 Place chicken in a medium-sized bowl.
2 Add almonds, celery and dried cherries.
3 In a small bowl, stir together yogurt, mayonnaise, lemon juice, mustard, poultry seasoning and season with salt and pepper to taste.
4 Add to chicken mixture and toss gently.
5 Serve.
