Chicken adds protein to these veggie-filled roll-ups.
INGREDIENTS

5 oz Chicken breast, boneless and skinless, meat only raw, USDA

1 tsp Dijon Mustard

2 romaine lettuce leaves

1 oz part-skim mozzarella cheese

1 cucumber(s)

1/4 red bell pepper

1/4 yellow bell pepper
DIRECTIONS

Using cooking spray, cook chicken in a non-stick pan over medium heat. Cook until browned on the outside and cooked throughout, about 8 to 10 minutes per side.

Spread mustard on lettuce leaves. Evenly distribute the chicken between the lettuce leaves.

Evenly distribute the chopped vegetables and place on chicken and top with cheese.

Roll up lettuce to make a wrap.
