Roasted Potato Salad With Kale and Grainy Mustard

Combine roasted potatoes with hearty greens and a grainy mustard dressing, and it’s a warm potato salad heaven. Enjoy this as a side salad. Recipe and image courtesy of Sherrie Castellano.

INGREDIENTS

SERVES 4

  • 8 Yellow Mini Potatoes
  • 1 tbsp olive oil
  • 1/8 tsp Natural Sea Salt, All Purpose
  • 1/8 tsp ground black pepper
  • 3 cups Lacinato Kale
  • 1 tbsp fresh chives
  • 1/2 tbsp LEMON Juice, Fresh Squeezed
  • 1 tbsp extra-virgin olive oil
  • 1/4 cup Stone Ground Mustard
  • 1/2 tsp Garlic Powder
  • 1/4 tsp sea salt
  • 1/4 tsp Pepper, Black

DIRECTIONS

1 Preheat your oven to 350 degrees and line a baking sheet with parchment paper.
2 Spread your potatoes over the parchment sheet and drizzle the olive oil over them evenly. Season with salt and pepper and roast for 20 - 25 minutes, flipping halfway through.
3 While the potatoes are roasting whisk together your dressing ingredients (lemon juice, olive oil, mustard, garlic powder, salt and pepper). When the potatoes are done roasting toss hot with the shredded kale and dressing. Plate with a sprinkle of chopped chives.
