Roasted Shrimp with Tomatoes

Shrimp is a good source of omega-3 fatty acids and protein and is low in mercury making it a great seafood choice.

INGREDIENTS

SERVES 3

  • 1 lb Extra Large Shrimp - Raw-peeled-cleaned-tail On
  • 1 lemon
  • 1 pt Tomatoes Cherry
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp Fresh Oregano
  • 1 lb Baby Leaf Spinach
  • 2 tsp extra-virgin olive oil
  • 1 pinch Salt
  • 1 pinch red pepper flakes
  • 1 oz Feta Crumbled Cheese with Mediterranean Herbs

DIRECTIONS

1 Toss 1 pound peeled extra-large shrimp with the zest of 1 lemon, 1 pint halved cherry tomatoes, 1 tablespoon extra-virgin olive oil and 1 teaspoon chopped fresh oregano.
2 Cover tightly and refrigerate up to 8 hours.
3 Roast in a preheated 400-degree oven until shrimp is cooked through, about 8 minutes, depending on size of shrimp.
4 While shrimp cooks, saut? 1 pound baby spinach in 2 teaspoon olive oil; season with salt and hot red pepper flakes to taste.
5 Top with fresh lemon juice and crumbled feta cheese for a simple Greek-inspired meal.
