Roasted Tomato Marinara

For this sauce the tomatoes are combined with onions and garlic. The jury is out on whether garlic is as healthful cooked as when it’s raw, but onions retain many of their flavonoids when cooked.

INGREDIENTS

SERVES 8

  • 6 cups Chopped Tomatoes
  • 1 cup Chopped Sweet Onion
  • 4 clove garlic
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 1/4 tsp Garlic Salt
  • 1/4 tsp Black Pepper

DIRECTIONS

1 Preheat oven to 425 degrees
2 In a baking dish, add all ingredients and stir gently
3 Roast until tomatoes and onions are caramelized at the edges, 35-40 minutes, stirring partway through
4 Let cool, and either use as is or blend in a blender until creamy.
5 *Tomatoes don’t taste the best in their off season, so the caramelization created through roasting is an awesome tool for upping the game of bland winter tomatoes.
