Rose Water Pink Pistachio Dates

While this scrumptious dessert looks complex, it takes just a few minutes to make and has only five ingredients, including optional rosewater. (Paleo, vegan, gluten-free)



  • 12 Pitted Dates
  • 2 tbsp Pistachios, Roasted & Salted


1 Sprinkle dates with rose water; skip this step if you don't have it on hand
2 Put whipped cream in a ziplock baggie and cut off one tip. (See recipe below for "Dragon fruit Whipped Coconut Cream)
3 Pipe approximately 1 tablespoon of cream into each date.
4 Top each date with a pinch of chopped pistachios.
5 Dragon Fruit Whipped Coconut Cream
6 Ingredients:
7 cups full fat coconut milk or cream
8 tbsp dragon fruit puree
9 Directions:
10 Refrigerate coconut milk or cream for at least four hours; do not shake
11 Open container and scoop solids into a bowl; discard gooey water underneath
12 Whip milk solids with a whisk until fluffy, about five minutes
13 Stir in dragon fruit puree
14 If desired, for a sweeter end product you can add sugar, stevia, or other sweetener to taste.
