Rose Water Pink Pistachio Dates

While this scrumptious dessert looks complex, it takes just a few minutes to make and has only five ingredients, including optional rosewater. (Paleo, vegan, gluten-free)



  • 12 Pitted Dates
  • 2 tbsp Pistachios, Roasted & Salted
  • 2 cups coconut milk
  • 1 serving Pitaya


1 Sprinkle dates with rose water; skip this step if you don't have it on hand
2 Scoop out the solids of the coconut milk cans (make sure cans have been refrigerated minimum 4 hours) and whisk with pitaya packet for whipped cream. Put whipped cream in a ziplock baggie and cut off one tip.
3 Pipe approximately 1 tablespoon of cream into each date.
4 Top each date with a pinch of chopped pistachios.
