Rosemary Sweet Potato Gravy

Greasy pan drippings aren’t necessary to make Thanksgiving gravy. This sweet-and-savory version is vegan.



  • 1 1/2 tbsp extra-virgin olive oil
  • 1 medium red onion
  • 1 tbsp Red Wine Vinegar
  • 1 1/2 tsp sea salt
  • 1 1/2 medium Premium Sweet Potatoes
  • 3 cups low-sodium vegetable broth
  • 3/4 tsp ground black pepper
  • 1 tsp fresh rosemary


1 Heat the oil over medium in a large saucepan. Add the onion, vinegar, and 1/4 teaspoon of the salt, increase heat to medium-high, and sauté until the onion is softened, about 5 minutes.
2 Add the sweet potato, broth, pepper, and the remaining 1 1/4 teaspoons salt. Increase heat to high and bring to a boil. Reduce heat to medium, cover, and cook until the sweet potato is fully softened, about 22 minutes.
3 Puree the soup in batches in a blender until velvety smooth, using the hot fill line as a guide. Reheat, if need.
4 Stir in the rosemary, adjust seasoning, and serve.
