Sunflower Seed and Sage-Crusted Chicken Tenders

These gluten-free tenders have a nutty crust and are packed with flavor.

INGREDIENTS

SERVES 1

  • 1 egg white(s)
  • 1 tbsp sesame seeds
  • 1 tbsp sunflower seeds
  • 1 tsp fresh sage leaves
  • 1 dash ground black pepper
  • 5 oz raw chicken tenders

DIRECTIONS

1 Preheat the oven to 400F and line a baking sheet with parchment.
2 Place the egg white in a shallow bowl. In another small bowl, combine the sesame seeds, sunflower seeds, sage, and black pepper.
3 Coat chicken tenders entirely with egg white, then dip in the seed mixture, coating both sides. Transfer to one half of the baking sheet and mist the surface of the chicken with cooking spray. Flip the tenders with the fork and mist the other side.
4 Bake 15-17 minutes, or until the chicken is cooked through. Flip tenders halfway through cooking time.
