Salmon Croquettes

Salmon Croquettes

Salmon is loaded with omega-3 fatty acids.

INGREDIENTS

SERVES 4

  • 15 oz Cooked Atlantic Salmon
  • 6 stalk Fresh GREEN ONIONS
  • 1 tbsp Dill Weed, Fresh
  • 1 tbsp Mayo
  • 1 Egg
  • 1/4 cup Whole Wheat Bread Crumbs

DIRECTIONS

1 Combine boneless, skinless salmon; green onions, fresh dill, mayonnaise, egg and whole-wheat breadcrumbs.
2 Form into 4 patties; cover tightly with plastic wrap and refrigerate up to 2 days.
3 To cook, heat a splash of oil in a large nonstick skillet over medium heat for 3 minutes.
4 Dredge patties in flour; add to hot oil and cook 4 to 5 minutes per side.
