Savory Protein Breakfast Bowl

You really can’t go wrong with a breakfast bowl when you follow this template: grain, high-quality protein, greens, veggies, fun toppings and a zippy dressing. Just make sure to pay attention to servings sizes. Once you've nailed a couple of recipes, branch off and experiment with different flavors and textures.

INGREDIENTS

SERVES 2

  • 1 tsp Avocado Oil
  • 4 cups raw kale
  • 2 cups cooked wild rice
  • 1 cup edamame
  • 1/2 fruit without skin and seed Avocados, raw, California
  • 1/2 medium raw radishes
  • 4 oz Hemp Seeds
  • 4 oz Tahini
  • 2 tbsp Maple Syrup
  • 1 oz lemon juice

DIRECTIONS

1 In a pan, saute raw kale leaves (ribs removed). Remove from heat once softened.
2 While kale is cooking, make sauce by whisking together tahini, syrup and lemon juice. Thin with water as needed.
3 Between two bowls, divide the cooked rice. Top with edamame, kale, avocado, and radishes. Sprinkle hemp seeds on top and drizzle with sauce.
