Rather than fruit and sugar, vegetables and sea salt are keys to this trendier take on hot cereal.
INGREDIENTS

5 cups cold water

2 large Green Bell Pepper

2 red bell pepper

2 tsp Lemon Juice

1 1/2 tsp sea salt

1/2 tsp ground black pepper

2 1/2 cups Oats, Old Fashioned

3 stalk scallion(s)

1 tbsp Fresh Dill

1 tbsp extra-virgin olive oil

3 oz Soft Goat Cheese
DIRECTIONS

Bring the water, bell peppers, lemon juice, salt, and black pepper to a boil in a large saucepan.

Stir in the oats and scallions and reduce heat to medium. Cook, while stirring, until the oats are fully cooked, about 5 minutes. Remove from heat and stir in the dill and olive oil.

Transfer oatmeal to four (2-cup capacity) freezer- and microwave-safe bowls. To save for later, cover well and freeze.

To enjoy one bowl, uncover and top the bowl with unbleached parchment paper or paper towel.

Microwave on HI for 3 1/2 minutes and stir. Microwave until done, about 1 1/2 minutes more. Microwave times vary. Adjust seasoning. Sprinkle with goat cheese (or cashew cheese), if using. (Hint: If desired, garnish with additional fresh dill at the table.)
