Savory Vegan Zucchini Oatmeal

INGREDIENTS

SERVES 1

  • 1 1/2 cups water
  • 1 tsp Lemon Juice
  • 1/4 tsp sea salt
  • 3/4 cup Old Fashioned Oats
  • 1 zucchini(s)
  • 1 tsp extra-virgin olive oil
  • 1 1/2 tbsp Hemp Seed, Raw Shelled
  • 1 tsp Fresh Dill

DIRECTIONS

1 Bring the water, lemon juice, and salt to a boil in a large saucepan.
2 Stir in the oats, zucchini, scallion, and olive oil and reduce heat to medium. Cook, while stirring occasionally, until the oats and zucchini are fully cooked, about 6 minutes. Remove from heat and stir in the hemp seeds. Add additional salt to taste.
3 Transfer the oatmeal to individual bowls and sprinkle with the dill. (Hint: If desired, sprinkle with red hot pepper for “heat” and color.)
4 Enjoy with a cup of black tea or coffee.
