Sea Salt Caramel Trail Mix Fries

The caramel in this recipe is made from soaked dates and their soaking water. It’s livened up a bit with a good pinch of salt and a dash of cinnamon. The salt offsets the sweetness of the dates, and the cinnamon brings it to a more standard caramel color and lessens some of the dates’ sugary effect on your blood. You can use any dried fruits, nuts and seeds that you like.

INGREDIENTS

SERVES 4

  • 2 medium cooked sweet potato
  • 1 cup Dates, Pitted
  • 1 cup Hot Water
  • 3 tbsp Pumpkin Seeds
  • 2 tbsp Dried Cherries
  • 2 tbsp Dried Cranberries
  • 1 tbsp almonds
  • 1 tbsp Toasted Salted Hemp Seeds
  • 1/4 tsp Sea Salt
  • 1/2 tsp cinnamon

DIRECTIONS

1 Soak dates in hot water for 15 minutes
2 Blend soaked dates in a blender with 3/4 cup soaking water, cinnamon, and salt until creamy and smooth
3 Place fries on a platter and top with caramel sauce, then scatter each trail mix item over the top
4 *This recipe uses roasted white sweet potato fries, which you can make using my "base recipe":
5 cups (about 2 medium) sweet potatoes, sliced into 1/4 inch wide strips
6 /2 tbsp algae oil
7 /2 tsp salt
8 Preheat oven to 415 degrees F
9 Drizzle half the oil onto a parchment lined baking sheet
10 Lay sweet potato strips onto baking sheet in even lines
11 Drizzle salt and remainder of oil over strips
12 Roast for 35 minutes, flipping halfway through
