Shaved Vegetable Salad with Anchovies

Chef and author Seamus Mullen says an easy way to dress up a salad is by playing with the texture. Add shaved veggies like fennel, radishes, carrots and creamy avocado, as well as unconventional salad fare like rutabagas and apples. The kefir and chia vinaigrette in this salad adds probiotics, dietary fiber and calcium to your salad, while wild-caught sardines add environmentally-friendly omega-3 fatty acids.

INGREDIENTS

SERVES 2

  • 5 medium raw radishes
  • 1 cup Fennel, bulb, raw
  • 1 medium raw carrots
  • 1 medium Rutabagas, raw
  • 1 tbsp Shallots, raw
  • 1 medium granny smith apple
  • 1 serving Baby Arugula
  • 1 fruit without skin and seed Avocados, raw, California
  • 2 tbsp Basil, fresh
  • 1 serving mint leaves
  • 5 sprigs Dill weed, fresh
  • 1/4 tsp Sea Salt
  • 3/5 g Pepper, Ground Black
  • 2 tbsp Vinaigrette, Lemon Chia
  • 1 can Sardines, in Olive Oil
  • 1 fruit lemon

DIRECTIONS

1 Mix ingredients together in large bowl.
2 Dress with vinaigrette.
