Shrimp and Vegetable Salad with Coconut Peanut Sauce

Layering colorful, antioxidant-rich vegetables and lean protein in a jar is an exciting and nutritious way to enjoy a salad.

INGREDIENTS

SERVES 4

  • 1/4 cup Coconut Milk Light
  • 1/4 cup All Natural Peanut Butter
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp agave nectar
  • 2 tsp Sriracha sauce
  • 2 garlic clove
  • 1 tbsp Lime Juice Raw
  • 16 oz Cooked Medium Shrimp
  • 1 cup Organic Edamame
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 carrot(s)
  • 1 cup Cooked Brown Basmati Rice
  • 1/4 cup fresh cilantro

DIRECTIONS

1 Make the Coconut Peanut Sauce. Whisk together the first 7 ingredients (coconut milk through lime juice). Taste and add more lime juice if necessary.
2 Layer coconut peanut sauce (make sure sauce is on the bottom), shrimp, edamame, brown rice, peppers carrots and cilantro in mason jars.
3 When ready to eat, simply shake mason jar to evenly distribute sauce. Enjoy!
