Simple Eggplant Stir-Fry with Hemp Seeds

Rather than a traditional stir-fry, you’ll be using a technique here that’s more like steam-stirring—keeping calories in check. The spotlight is on the eggplant. Hemp seeds complete it, adding protein and intrigue.

INGREDIENTS

SERVES 1

  • 2 tsp Tamari Soy Sauce
  • 1 tsp honey
  • 1/2 tsp Fresh Ginger Root
  • 1/3 cup Low Sodium Organic Chicken Broth
  • 2 tsp Toasted Sesame Oil
  • 1 small eggplant
  • 2 stalk scallion(s)
  • 3 tbsp Organic Hemp Hearts
  • 1/2 cup cooked brown rice

DIRECTIONS

1 Whisk together the soy sauce, honey and ginger in a liquid measuring cup or small bowl. Set aside.
2 Bring the broth and oil to a boil in a seasoned wok or large skillet over high heat. (TIP: For vegetarians, use 1/3 cup of low-sodium vegetable broth instead of chicken broth.)
3 Add the eggplant and white part of the scallions and cook while stirring until the liquid is fully evaporated and eggplant is fully cooked, about 4 minutes. Add the soy sauce mixture, hemp seeds and green part of the scallions and toss to coat.
4 Enjoy with brown rice (or other whole grain of choice).
