Simple Southwestern Egg Scramble

For those wanting their plate to be packed with protein, there’s no better way to start the day than with a plate of eggs. Eggs are an excellent source of high-quality protein.

INGREDIENTS

SERVES 4

  • 1 1/3 cups Pico de Gallo
  • 1 tbsp Oil, avocado
  • 352 g Eggs, Organic Medium Brown
  • 1/8 tsp Sea Salt
  • 4 oz Shredded Cheese, Medium Cheddar

DIRECTIONS

1 Add the pico de gallo (fresh salsa) to a mesh strainer and drain well. Set aside.
2 Heat the oil in a large cast-iron or other stick-resistant skillets over medium-low heat. Add the eggs and salt and cook while gently folding the eggs until no longer runny yet still moist, about 4 to 5 minutes. Remove from heat and gently stir in the cheese until melted.
3 Transfer the eggs to individual plates or a platter, top with the pico de gallo, and serve. Delicious paired with avocado slices or poultry sausage.
