Simple Vegan Taco Salad

A vegan take on this taco salad, plain almond yogurt or soy yogurt can be used.

INGREDIENTS

SERVES 1

  • 1/2 onion
  • 2 tsp extra-virgin olive oil
  • 8 oz firm tofu
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 pinch ground cinnamon
  • 1 pinch sea salt
  • 1 cup chopped romaine lettuce
  • 1/2 lime
  • 2 tbsp salsa
  • 3 tbsp plain soy yogurt

DIRECTIONS

1 Sauté the onion with the olive oil until translucent, about 3 minutes.
2 Add the tofu, cumin, chili powder, and cinnamon. Season to taste with salt.
3 Cook, stirring constantly, until the tofu is browned, 4 to 5 minutes. Place the lettuce on a plate and add the tofu.
4 Cut lime into wedges. Garnish with the lime, salsa, and yogurt.
