A vegan take on this taco salad, plain almond yogurt or soy yogurt can be used.

1/2 onion

2 tsp extra-virgin olive oil

8 oz firm tofu

1 tsp ground cumin

1 tsp chili powder

1 pinch ground cinnamon

1 pinch sea salt

1 cup chopped romaine lettuce

1/2 lime
-
2 tbsp salsa
-
3 tbsp plain soy yogurt
DIRECTIONS

Sauté the onion with the olive oil until translucent, about 3 minutes.

Add the tofu, cumin, chili powder, and cinnamon. Season to taste with salt.

Cook, stirring constantly, until the tofu is browned, 4 to 5 minutes. Place the lettuce on a plate and add the tofu.

Cut lime into wedges. Garnish with the lime, salsa, and yogurt.
