Simple Veggie Tofu Soup

This quick, homemade veggie soup has fiber and vitamin A, and is ready in less than 20 minutes.

INGREDIENTS

SERVES 1

  • 2 cups low-sodium vegetable broth
  • 1 cup frozen mixed vegetables
  • 2 celery stalk(s)
  • 8 oz firm tofu
  • 2 carrot(s)

DIRECTIONS

1 Add all the ingredients to a saucepan and cook over medium heat and bring to a boil.
2 Reduce the heat and simmer until the veggies are tender.
3 Add salt and pepper to taste.
