Slow Roasted Beets with Basil Pistachio Pesto

Beets may be one of the healthiest vegetables you aren’t eating. Beets are naturally high in nitrates, which sometimes get a bad rap for being used as a preservative in foods.

INGREDIENTS

SERVES 4

  • 2 cups raw beets
  • 1/4 cup Basil, fresh
  • 1/4 cup Pistachios
  • 1 tbsp Extra Virgin Olive Oil
  • 1/4 cup feta cheese

DIRECTIONS

1 Preheat oven to 450° F.
2 Rinse beets and place in aluminum foil.
3 Fold foil around beets, leaving air in between the foil and the beets for steam to help cook the beets.
4 Place on a baking sheet and roast in the oven for 45 minutes to 1 hour, depending on the size of the beets.
5 While the beets are cooking, chop pistachios and basil and add to a small bowl.
6 Add olive oil to the bowl and stir.
7 When beets are done roasting, allow to cool slightly, remove skins and chop or slice beets.
8 Top with pistachio pesto, feta, and an extra drizzle of olive oil.
