Southwestern Egg Scramble

This scramble is so easy and flavorful that you’ll be putting it in your rotation for breakfast, lunch or dinner. Recipe + Image courtesy of Sherrie Castellano, With Food + Love.

INGREDIENTS

SERVES 1

  • 1 tsp olive oil
  • 1/2 cup Black Beans, Canned
  • 1/2 tsp ground cumin
  • 1/2 tsp Garlic Powder
  • 1/4 cup water
  • 2 egg
  • 1/2 medium avocado
  • 1 tbsp scallion(s)
  • 1 pinch sea salt
  • 1 pinch Black Pepper

DIRECTIONS

1 Heat the oil in a sauté pan over low heat. Add in the beans, cumin, garlic and water and bring to a gentle simmer. Remove the beans from the pan and set aside.
2 Crack the two eggs in a bowl and whisk. Pour the eggs into the pan and cook until scrambled, and season with salt and pepper.
3 To plate: combine the eggs with the beans and top with avocado, scallions and red pepper flakes if desired.
