Southwestern Salad With Black Beans

INGREDIENTS

SERVES 4

  • 4 cups Shredded Romaine Lettuce
  • 12 oz Cooked Skinless Chicken Breast
  • 1 medium avocado
  • 2 cups Canned Black Beans
  • 2 cups canned corn
  • 2 cups cherry tomatoes
  • 1/3 cup fresh cilantro
  • 2/3 cup Sour Cream, Light
  • 1/4 cup Milk- 1%
  • 1 tbs Canned Chipotle Peppers In Adobo Sauce
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp 100% Lime Juice
  • 1/4 tsp Salt*

DIRECTIONS

1 TIP: Use cooked chicken breast so temperature is cooled.
2 For Salad:
3 Place salad at the base of the salad bowl. Slice chicken breasts. Combine black beans, corn, tomatoes, cumin, chili powder and salt. Mix and pour over salad greens.
4 Place sliced chicken corn, black bean mixture. Drizzle dressing over salad. Serve immediately on individual plates. Slice ¼ of avocado over top of salad for garnish.
5 Can add a lime wedge on side if desired.
6 For Dressing:
7 Blend together cilantro, sour cream, milk, peppers, spices and lime juice. Refrigerate for at least 15 minutes or longer.
