Special Occasion Vegetable Egg Strata

This is the perfect dish for when you're having friends or family over for a weekend brunch. Recipe courtesy of Jackie Newgent, RDN.

INGREDIENTS

SERVES 8

  • 2 tsp extra-virgin olive oil
  • 8 oz Baby Bella Mushroom
  • 1 red bell pepper
  • 1 large Green Bell Pepper
  • 3/4 tsp Black Pepper
  • 3/4 tsp sea salt
  • 6 Pasture-Raised Grade A Organic Eggs
  • 1 3/4 cups 2% Milk
  • 6 slices Whole Grain Sandwich Bread
  • 6 oz Shredded pepper jack cheese

DIRECTIONS

1 Heat oil in a large (PFOA-free) nonstick skillet over medium-high. Add mushrooms, bell peppers, black pepper, and 1/4 teaspoon salt and sauté until bell peppers are tender and mushrooms are brown, about 10 minutes. Set aside in the skillet.
2 In a large bowl, whisk together the eggs, milk, and remaining 1/2 teaspoon salt. Cut the toast into cubes. (Note: For best results, use a soft sandwich-style bead for toasting.) Stir the toast cubes into the egg mixture along with the pepper Jack cheese. Then stir in the vegetable mixture.
3 Spritz a 1 1/2-quart or 9- x 13-inch baking dish with organic cooking spray. Transfer the egg mixture to the baking dish and evenly distribute ingredients while gently pressing down to compact ingredients. Cover and chill in the refrigerator overnight.
4 Preheat oven to 350°F. Cover the chilled dish with foil and bake 40 minutes. Uncover and bake until set, about 25 minutes more. Serve 8 as an entrée. Or serve 6 as a one-dish-meal.
