Spicy Asian Carrot “Noodles”

A healthy noodle dish packed full of beta-carotene.

INGREDIENTS

SERVES 4

  • 1/4 cup brown rice vinegar
  • 2 tbsp honey
  • 1 1/2 tbsp soy sauce (tamari)
  • 1 tbsp Fresh Ginger Root
  • 1 tsp Chili Paste With Garlic
  • 2 stalk scallion(s)
  • 1 1/2 lb Carrot, Raw
  • 1 1/2 tbsp sesame oil
  • 2 tbsp fresh cilantro
  • 1 tbsp sesame seeds

DIRECTIONS

1 In a small bowl, whisk together the vinegar, coconut nectar, soy sauce, ginger, and chili paste. Stir in the scallions. Set aside.
2 Peel, and spiralize or julienne.
3 Cook the carrot noodles in boiling water until al dente (slightly softened), about 2 minutes; drain well.
4 In a large bowl, toss the carrot noodles with the sesame oil. Add the sauce mixture and toss.
5 Garnish with the cilantro and sesame seeds. Serve warm or cool.
