Spicy Bean Chili

Spicy Bean Chili

INGREDIENTS

SERVES 4

  • 2 tsp grapeseed oil
  • 1 medium red onion
  • 1 Jalapeno Pepper
  • 2 garlic clove
  • 30 oz Red Kidney Beans Low Sodium
  • 1 1/4 cups low-sodium vegetable broth
  • 1 cup Crushed Tomatoes, canned
  • 1 1/2 tsp chili powder
  • 1/2 tsp sea salt
  • 1/4 tsp Cinnamon, Ground

DIRECTIONS

1 Heat the oil in a large saucepan over medium-high. Add the onion and jalapeño and sauté until the onion is lightly caramelized, about 5 minutes. Add the garlic and sauté until fragrant, about 30 seconds.
2 Stir in the remaining ingredients and bring to a boil on high for 1 minute. Cover, reduce heat to low, and simmer until flavors are well combined, about 10 minutes. (Alternatively, if desire a thick consistency, simmer over medium-low without a lid.)
3 Garnish as desired, such as with organic low-fat sour cream or quark and fresh cilantro.
