Spicy Flank Steak Lettuce Cups

This low-carb dish combines savory steak, fresh crisp lettuce, and exciting Korean radishes and spices. It can be divvied up as an appetizer, but works just as well being distributed among fewer plates for a larger portion main entree.

INGREDIENTS

SERVES 8

  • 8 oz Flank Steak
  • 1 Red Radishes
  • 1/4 tsp chili flakes
  • 2 tsp Brown Rice Vinegar
  • 1 medium peeled cucumber
  • 15 leaf , medium butter lettuce
  • 2 clove garlic
  • 1 tsp olive oil
  • 2 tsp Soy sauce made from soy (tamari)
  • 1 tsp Sesame Oil
  • 15 leaf fresh mint leaves

DIRECTIONS

1 Pat dry the steak and season with a dry rub of salt, black pepper, and chili pepper to taste, let sit at room temperature for 15-30 minutes.
2 Meanwhile, prepare the quick-pickled radish. Trim the radish, cut in half, then slice into thin half-moons. Combine in a small bowl with ¼ tsp chili flakes and 1 tsp brown rice vinegar. Set aside.
3 Wash and dry cucumber. Trim ends. Cut lengthwise, then slice into thin half-moons. Makes about 1 cup, loosely packed. You may have extra.
4 Wash the lettuce, cutting out the core, and gently separating leaves in a large bowl of water. Agitate now and then to remove dirt. Drain and repeat as needed. Lift the lettuce out of the water and dry on clean towels or paper towels.
5 Rough chop the garlic.
6 Heat 1 tsp olive oil over medium-heat in a large non-stick pan until hot but not smoking. Cook steak for 5 minutes on one side, turn, and cook another 3 minutes. Set aside to rest for at least 10 minutes.
7 Do not clean pan. Whisk together soy sauce, sesame oil, and remaining 1 tsp brown rice vinegar. Add to pan with garlic and stir continuously until fragrant, 10-20 seconds. Set aside for garnish.
8 Remove mint leaves from sprig, roll together, then thinly slice.
9 Cut steak against the grain in ½ inch slices on the bias (diagonal).
10 Double up on lettuce leaves to make 8 lettuce “cups.” Divide meat, radishes, and cucumbers evenly among cups. Top with garlic garnish and mint. Enjoy. Alt: Set out all ingredients and let people make their own appetizers.
