Spicy Shrimp Fajitas

Shrimp is a good source of protein, which makes them perfect for adding to your keto diet. The heat in these shrimp fajitas comes from ground chipotle peppers which are dried jalapeños with a distinctive smoky flavor. If spicy food is not your forte, feel free to substitute a chile powder that packs less heat like ground California chili powder.

INGREDIENTS

  • 4 oz Peeled Shrimp
  • 1 clove garlic
  • 1/4 tsp Ground Chipotle Chile
  • 1/4 tsp Cumin, Ground
  • 1 serving Oregano, Leaves
  • 2 tbsp Extra Virgin Olive Oil
  • 1 medium green bell pepper
  • 1 oz Yellow Bell Pepper, One Ounce
  • 1 medium red bell pepper
  • 1/2 cup Anaheim Peppers
  • 3/4 cup Onion, Diced White
  • 1 oz lemon juice
  • 1 oz Fresh Cilantro Leaves

DIRECTIONS

1 Mix together the shrimp, garlic, chile powder, cumin, and oregano in a large bowl. Stir gently to combine. Season with salt and black pepper to taste.
2 Cover with plastic wrap; refrigerate for at least 30 minutes.
3 Heat olive oil in a grill pan over high heat. Add shrimp and sauté for about 5 minutes until the shrimp turn pink.
4 Stir in the onion, bell peppers, Anaheim chile, and lemon juice. Continue to sauté for 3-to-5 minutes, just until the onion turns translucent.
5 Remove from heat; stir in cilantro. Enjoy with cheese tortillas.
