DIRECTIONS

Preheat the oven to 350 degrees Fahrenheit.

Coat a baking sheet with cooking spray.

Mix the breadcrumbs, cumin, coriander and cayenne in a small mixing bowl, then spread the mixture over a dinner plate.

Crack and whisk the two eggs in a bowl

Slice the avocado in half, then slice each half into wedges (approximately 6 wedges per side).

Dip each avocado wedge in cornstarch and shake off the excess.

Dip the coated avocado slices in egg mixture before rolling in the breadcrumbs until fully coated.

Transfer to a baking sheet and coat lightly with cooking spray.

Bake for 15 minutes, flipping once midway through, until the breading starts to brown.

Remove from the oven and serve immediately, drizzled with the sriracha.
