Spicy Sweet Potato Soup with Coconut

This comforting soup is perfect to make in bulk for weeknight meals or as a starter at your next get together. Coconut milk, red curry paste and fresh cilantro add tons of flavor. The fresh cilantro is left whole (stems and all) and submerged into the soup and later removed to extract flavor. Chop your sweet potatoes small so they cook quickly. Blend the soup with a blender (in batches), an immersion hand blender or a food processor. Garnish with additional chopped cilantro and/or shredded coconut if desired.

INGREDIENTS

SERVES 8

  • 3 second Original No-Stick Cooking Spray
  • 1 tbsp extra-virgin olive oil
  • 1 onion
  • 5 serving Sweet Potatoe-medium Size
  • 1 1/2 tsp sea salt
  • 3 cups Coconut Milk Light
  • 2 cups Low Sodium Chicken Stock
  • 3 cloves Garlic Clove
  • 1 1/2 tbsp Red Curry Paste
  • 3 tbsp agave nectar
  • 1/3 cup Sweetened Shredded Coconut
  • 1/2 medium Lime
  • 1 cup fresh cilantro

DIRECTIONS

1 Heat a good soup pot over medium high heat. Once hot, spray generously with fat free cooking spray and extra virgin olive oil.
2 Once oil is hot, add onions and sauté 5 minutes or until softened.
3 Add sweet potatoes and salt to pot and continue to sauté for 5 minutes.
4 Stir in light coconut milk, low sodium chicken stock, garlic and red curry paste.
5 Take cilantro (with stems and all) and tie it with kitchen string. Submerge the tied cilantro into the pot of soup. Bring soup to a simmer.
6 Once soup comes to a simmer, lower the heat and let it cook at just above a simmer for 30 minutes, stirring occasionally. Remove cilantro from soup and discard.
7 Using a hand immersion blender, food processor or regular blender, blend soup until smooth and creamy. If using a blender or food processor, blend in batches. Return soup to stove top.
8 Stir in agave nectar, shredded coconut and approximately 3 tablespoons of fresh lime juice. Let cook for another few minutes to let flavors blend. Top with shredded coconut and cilantro if desired. Enjoy!
