Spicy Vegan Gameday Chili Soup

It’s as enticing as a hearty bowl of chili, yet you’ll enjoying it in a lower-calorie way because, cup for cup, you’ll have extra broth.

INGREDIENTS

SERVES 4

  • 1 tbsp grapeseed oil
  • 1 medium red onion
  • 1 Serrano Pepper
  • 3 garlic clove
  • 32 oz low-sodium vegetable broth
  • 14 1/2 oz Fire Roasted Crushed Tomatoes
  • 1 tbsp red wine vinegar
  • 1 1/2 tbsp chili powder
  • 1/8 tsp Chinese Five Spice Powder
  • 30 oz No Salt Added Chili Beans
  • 3 tbsp fresh cilantro

DIRECTIONS

1 Heat the oil in a stockpot over medium-high. Add the onion and serrano pepper and sauté until the onion is softened, about 5 minutes. Add the garlic and sauté until fragrant, about 30 seconds.
2 Add the broth, tomatoes, vinegar, chili powder, and five spice powder (or cinnamon) and bring to a boil over high. Stir in chili beans (or kidney beans) and salt and return to a boil. Reduce heat to medium-low and simmer, uncovered, until flavors are well combined, about 10 minutes. Adjust seasoning.
3 Stir in or sprinkle with the cilantro, and serve. (Hint: If desired, serve with hot sauce on the side for extra spiciness.)
