Here’s what you’ll layer: corn tortillas, black beans, pico de gallo, corn, salsa verde and pepper jack cheese. Then melt it all together and garnish with cilantro.
INGREDIENTS

12 , medium corn tortilla (without salt)

15 oz Canned Black Beans

1 1/4 cups Add-Ons, Pico de Gallo

2 1/2 cups Frozen Corn-- Organic Brand

1 cup Salsa Verde

14 oz Shredded Pepper Jack Cheese

1/4 cup Fresh Cilantro Leaves
DIRECTIONS

In a 10-inch-round microwave-safe dish, make three alternating lasagna-like layers using corn tortillas, beans, pico de gallo, corn, salsa verde (tomatillo salsa), and cheese. Firmly pack layers.

Cover and chill overnight, if desired.

Uncover. Then loosely cover with unbleached parchment paper and microwave on HIGH for 5 minutes, or until hot and cheese is fully melted. (NOTE: Microwave cooking times vary.)

Sprinkle with fresh cilantro leaves to serve. If desired pair with guacamole, sour cream and/or additional salsa.
