Spinach-Artichoke Dip

Our creamy spinach-artichoke dip features labneh in place of sour cream, cream cheese and mayo. Labneh is full of calcium and protein while being low in carbs and fat. It also adds a richness that you don’t quite get with your typical supermarket Greek yogurt.

INGREDIENTS

SERVES 4

  • 1 Bunch Of Spinach
  • 1 cup Labneh
  • 8 1/2 oz Artichoke Hearts (canned)
  • 2 clove garlic
  • 1 tbsp Pure Ground Parmesan Cheese
  • 1/4 tsp Sea Salt
  • 1/4 tsp Ground Black Pepper
  • 1/4 tsp Cayenne

DIRECTIONS

1 Chop half of the fresh spinach and reserve.
2 Over a steamer filled with a ¼ inch of boiling water, steam the other half of the spinach in batches until it wilts, then dunk in a bowl of ice water, drain and press in a towel (or paper towels) to remove all the moisture. Chop and reserve.
3 Mix steamed and raw spinach into labneh. Add chopped artichokes, pressed garlic, Parmesan, salt, pepper and Cayenne. Adjust seasoning and serve with crudites or bagel chips.
