Spinach and Shallot Feta Pizza

A guilt-free, nutritious pizza, that's quick and easy to make.

INGREDIENTS

SERVES 1

  • 2 whole-wheat pitas (4-inch)
  • 2 tbsp low-fat feta cheese
  • 1/2 tomato(es)
  • 2 tsp extra-virgin olive oil
  • 1/2 shallot(s)
  • 3 cups baby spinach
  • 1 garlic clove

DIRECTIONS

1 Preheat oven to 400F and line a baking sheet with parchment.
2 Divide cheese on top of each pita and top with a tomato slice.
3 Place pitas on the baking sheet and cook 12-13 minutes or until edges are golden.
4 Meanwhile, place olive oil in a pan and saute spinach and onion with garlic, until spinach is just wilted.
5 Remove pitas from oven. Divide sautéed spinach mixture onto each pita, and serve.
