2 whole-wheat pitas (4-inch)

3 tbsp low-fat feta cheese

1 tomato(es)

2 tsp extra-virgin olive oil

1 shallot(s)

4 cups baby spinach

1 garlic clove
DIRECTIONS

Preheat oven to 400F and line a baking sheet with parchment.

Divide cheese on top of each pita and top with a tomato slice.

Place pitas on the baking sheet and cook 12-13 minutes or until edges are golden.

Meanwhile, place olive oil in a pan and saute spinach and onion with garlic, until spinach is just wilted.

Remove pitas from oven. Divide sautéed spinach mixture onto each pita, and serve.
