Spinach and Kale Greek Yogurt Dip

INGREDIENTS

SERVES 12

  • 1 1/2 cups plain low-fat Greek yogurt
  • 2 tbsp light Mayo
  • 4 cups Spinach, Raw
  • 1 1/2 cups Kale, Raw
  • 2 tbsp Onions, Green, Raw
  • 2 garlic clove
  • 4 of package Vegetable Soup Mix
  • 1 pinch salt and pepper

DIRECTIONS

1 Cook the spinach until soft (highly recommend steaming it in the microwave)
2 Wash kale and remove stems. Chop into small, bite-sized pieces.
3 Once spinach is cooled, mix all ingredients in a bowl.
4 Chill Serve with raw vegetables, pita chips or whole wheat cracker or flat bread.
