Spinach Salad with Avocado and Grapefruit Dressing

Dressings are typically oily or creamy, but you can bump up the nutrition profile of your dressings by mashing an avocado with finely chopped vegetables and herbs, making it more like a salsa than a smooth liquid sauce.

INGREDIENTS

SERVES 2

  • 1 tbsp extra-virgin olive oil
  • 1 tbsp whole grain mustard
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Grapefruit Juice
  • 1 tbsp 100% Lemon Juice
  • 1 tsp Honey Raw
  • 1 pinch salt and pepper
  • 1 tbsp Parsley
  • 1/4 medium avocado
  • 1/4 medium red onion
  • 5 Cherry Tomato
  • 4 cups Baby Spinach Organic
  • 1 cup bean sprouts

DIRECTIONS

1 Mix the olive oil, mustard, vinegar, grapefruit juice, lemon juice, honey, salt, and pepper, and a bowl, until smooth.
2 Add the parsley, avocado, onion, and tomato, and mix well.
3 Place the spinach and sprouts in a large bowl, pour the dressing on top, and mix well.
4 Serve in two dishes.
