Root vegetable, particularly beets are some of winter’s best. Both red and golden beets are packed with phytonutrients and so much beauty it’s hard not to love them. Recipe and image courtesy of Sherrie Castellano.
INGREDIENTS
SERVES 4

2 Golden Beets, Boiled or Roasted

2 serving Raw Red Beet (small)

1/2 tbsp extra-virgin olive oil

1/8 tsp Sea Salt

1/8 tsp ground black pepper

4 oz Blood Orange Juice

1 tbsp olive oil
-
1/4 tsp sea salt
-
1/4 tsp Pepper, Black

2 tbsp crumbled feta
-
2 tbsp Parsley, Raw Fresh
DIRECTIONS

Preheat the oven to 450 degrees.

Toss the beets in olive oil and lay in a single layer on a baking sheet. Roast for 25 - 30 minutes, flipping halfway through.

While beets are roasting combine your dressing ingredients.

To assemble, layer the beets in small stacks alternating colors. Pour the dressing (blood orange juice, olive oil, salt and pepper) over the stack and finish with a sprinkle of feta cheese, fresh parsley and a crack of pepper.
