Steak Burrito Minus the Burrito Jar

Skip the tortilla and layer fresh ingredients for a healthier burrito!

INGREDIENTS

SERVES 4

  • 16 oz Flat Iron Steak
  • 1 Orange
  • 4 cloves Garlic Clove
  • 1 lime
  • 1/4 cup Cilantro
  • 1/2 tbsp cayenne pepper
  • 1 tbsp extra-virgin olive oil
  • 3 medium Vine Tomatoes
  • 1/3 Jalapeno Pepper
  • 1/3 medium red onion
  • 1 garlic clove
  • 1/4 cup fresh cilantro
  • 1/2 medium Lime
  • 1 cup Black Beans
  • 1 cup cooked brown rice
  • 2 cups Romaine Lettuce

DIRECTIONS

1 Whisk together juice from one orange and one lime with minced garlic, 1/4 to 1/3 cup fresh cilantro, cayenne pepper and extra virgin olive oil in a medium size casserole pan. If flat iron steak is really large, slice it in half. Coat steak in marinade and marinate overnight.
2 Let marinated steak come to room temperature while you make the salsa. Quarter the tomatoes. Using your thumb, remove the seeds and discard. Chop the tomatoes, desired amount of jalapeno, about 1/3 red onion, and mince 1 garlic clove. Combine tomatoes, jalapeno, red onion and garlic in a bowl with 1/4 cup fresh cilantro and juice from 1/2 lime. Season to taste with salt and set aside.
3 Heat a large nonstick frying pan over medium high heat. Once hot, coat with fat free cooking spray. Let the pan heat for another moment. Place flat iron steak in pan. Let cook for approximately 8 minutes on each side for medium rare. Let steak rest for 10 minutes. Then using a sharp knife, slice very thin against the grain.
4 In a mason jar, layer the beans, romaine lettuce, brown rice, steak, fresh salsa and desired toppings (cheese, Greek yogurt, avocado). Enjoy!
