INGREDIENTS

SERVES 6

  • 1 cup Cashews Raw
  • 2 Whole Fresh Dates
  • 4 cups Strawberries
  • 2 tsp Organic Whole Cane Sugar
  • 3 oz Premium Orange Juice
  • 3 Stevia packet
  • 1 oz Grand Marnier
  • 1/4 cup Juice, 100% Pure Orange

DIRECTIONS

1 Soak 1 cup raw cashews for six hours and 2 pitted Medjool dates for six hours.
2 Wash and trim 2 pints of fresh strawberries. Slice the strawberries in half vertically, then thinly slice each half. Place them in a medium bowl. Sprinkle with 2 teaspoons organic cane sugar and toss. Let them sit, stirring occasionally, until they get juicy, about 15 minutes.
3 As the strawberries sit, rinse the cashews and place them in a high-speed blender. Drain the dates, but reserve their soaking water.
4 Add the dates, 1/3 cup orange juice and three 1-gram packets of stevia powder to the blender. Blend until smooth and creamy, stopping to scrape down the sides when necessary.
5 If the mixture is too dry and too difficult to blend, add a tablespoon or more of reserved date soaking water -- but only if needed. Be patient; it will eventually look like whipped cream.
6 Mix 2 tablespoons Grand Marnier or other orange liqueur and 1/4 cup orange juice with the strawberries. Divide the strawberries and their juices among six small bowls or stemmed glasses. Top each with the cashew cream, garnish with an orange wedge and serve.
