This salad is a delicate combination of leafy greens and berries — two staples of a healthy diet. The peppery baby arugula paired with sweet strawberries creates a wonderful balance of flavors.

4 cups Baby Arugula

2 cups strawberries

1 tbsp Champagne Vinegar

1/4 cup Olive Oil, Extra Virgin

1 tbsp lemon juice
DIRECTIONS

Wash baby arugula and strawberries.

In a medium bowl, combine champagne vinegar, olive oil, lemon juice, salt and pepper (if desired), and whisk until well-combined.

Place the arugula in a large bowl.

Before serving, pour half of the dressing over the greens to lightly dress.

Add strawberries into large salad bowl and gently fold into the salad. Add more dressing if needed.
