Strawberry-Coconut Cake Oatmeal

This tropical oatmeal combines fragrant toasted coconut -- a great source of fiber and heart-healthy fats -- with strawberries and vanilla coconut milk. It’s a breakfast that tastes like coconut-berry pound cake. The strawberries provide an excellent source of vitamin C, which strengthens your skin, hair, connective tissues and joints.

INGREDIENTS

SERVES 1

  • 1/3 cup Rolled Oats
  • 1 cup Fresh Strawberries
  • 2/3 cup Coconut Milk, Unsweetened Vanilla
  • 2 tbsp Shredded Unsweetened Coconut
  • 1 tsp Pure Vanilla Extract

DIRECTIONS

1 Combine the oatmeal, coconut milk, 1 Tbsp of the shredded coconut, vanilla extract and half the strawberries in a saucepan.
2 Heat over medium heat until the berries start to break down and the liquid absorbs, 6 to 8 minutes.
3 Transfer the oats your serving bowl.
4 Top with the remaining strawberries slices and toasted coconut, then serve immediately.
