On the days when farmer’s markets everywhere are loaded with zucchini and summer squash, grab a few and use them to make a pizza. That’s right – pizza!
INGREDIENTS

1 pizza Crusts, Whole Wheat

1 sec Cooking Spray, Non-Stick

2 tsp Extra Virgin Olive Oil

1 tsp Salt, table

1 tsp Black Pepper

1 medium zucchini
-
1 medium raw summer squash
-
1/2 cup Cheese, Fresh Mozzarella

2 cups Arugula
-
1 tsp balsamic vinegar
DIRECTIONS

Preheat oven to pizza crust recommendations.

Spread out pizza crust on a baking stone or baking sheet sprayed with non-stick cooking spray.

Brush one teaspoon of olive oil over crust and sprinkle with salt and pepper.

Make one circle around the pizza with the zucchini rounds and another with the summer squash.

Keep circling until you run out of veggies.

Tear mozzarella into pieces and add to the top of the pizza.

Bake for 15 minutes or until the cheese is browning and the crust is golden.

Remove from the oven and top the pizza with fresh arugula, extra virgin olive oil, and balsamic vinegar.
