Summer Squash Pizza with Creamy Mozzarella and Arugula

On the days when farmer’s markets everywhere are loaded with zucchini and summer squash, grab a few and use them to make a pizza. That’s right – pizza!

INGREDIENTS

SERVES 4

  • 1 pizza Crusts, Whole Wheat
  • 1 sec Cooking Spray, Non-Stick
  • 2 tsp Extra Virgin Olive Oil
  • 1 tsp Salt, table
  • 1 tsp Black Pepper
  • 1 medium zucchini
  • 1 medium raw summer squash
  • 1/2 cup Cheese, Fresh Mozzarella
  • 2 cups Arugula
  • 1 tsp balsamic vinegar

DIRECTIONS

1 Preheat oven to pizza crust recommendations.
2 Spread out pizza crust on a baking stone or baking sheet sprayed with non-stick cooking spray.
3 Brush one teaspoon of olive oil over crust and sprinkle with salt and pepper.
4 Make one circle around the pizza with the zucchini rounds and another with the summer squash.
5 Keep circling until you run out of veggies.
6 Tear mozzarella into pieces and add to the top of the pizza.
7 Bake for 15 minutes or until the cheese is browning and the crust is golden.
8 Remove from the oven and top the pizza with fresh arugula, extra virgin olive oil, and balsamic vinegar.
