Sweet Potato Nachos

Sweet Potato Nachos

Sweet potatoes are not like your average spuds. The orange-fleshed versions come with beta-carotene, a powerful antioxidant that helps to protect against cancer. A single, medium-sized potato provides more than your daily requirement of vitamin A, about a third of the vitamin C you need, nearly 15 percent of your recommended daily fiber and 10 percent of your needed potassium.

INGREDIENTS

SERVES 4

  • 1 sweetpotato , raw sweet potato
  • 1/2 cup Mexican Blend Cheese
  • 1 fruit without Avocados, raw, California
  • 1 medium whole tomato
  • 1 medium red onion
  • 2 oz fresh cilantro
  • 1 Jalapeno Peppers, Hot
  • 1/2 cup Canned Black Beans
  • 1 1/2 tbsp Coconut Oil
  • 1/2 tsp ground cumin
  • 1/4 tsp Chili Powder
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Sea Salt
  • 1/4 tsp Ground Black Pepper

DIRECTIONS

1 Slice sweet potato ¼ inch thick, place in a large bowl and drizzle with coconut oil.
2 Season with cumin, chili powder, garlic powder, salt and pepper.
3 Layer sweet potato slices in a cast iron skillet and bake at 450 ̊F degrees for 15-20 minutes.
4 Remove the sweet potato from the oven. Sprinkle with cheese and put back in oven for another 3 minutes to melt the cheese.
5 Remove from the oven and top with avocado, onions, tomatoes, jalapeño, black beans, and cilantro.
6 Note:
7 To make an individual serving, reduce the ingredients by half the suggested measurements. Reduce cooking time to 14-18 minutes in the oven.
