Sweet Potato Protein Hash

Three main ingredients come together for the easiest, protein-boosting breakfast you won't find anywhere else. To save time in the future, combine the sweet potatoes with olive oil and spices and store them in an airtight container in the refrigerator until you are ready to bake them.

INGREDIENTS

SERVES 4

  • 2 medium cooked sweet potato
  • 1 tbsp olive oil
  • 1 tsp Paprika, Smoked
  • 1/8 tsp Cayenne Pepper Sauce
  • 1/2 tsp Sea Salt
  • 8 oz Extra Firm Tofu
  • 2 fruit without skin and seed Avocados, raw, California
  • 1/2 cup salsa
  • 3 tbsp Hemp Seed

DIRECTIONS

1 Preheat oven to 350.
2 In a bowl, combine sweet potatoes, spices and olive oil. Mix until potatoes are well coated.
3 Place on a cookie sheet and bake for 40 minutes or until soft.
4 Over medium heat, add olive oil to a pan. Once hot, add onion and let saute. Then add tofu and keep stirring to keep from burning. Tofu will crumble. Add cooked sweet potato to the pan and continue to stir until well combined. combined.
5 Add tofu/potato mixture to a plate and top with avocado slices, salsa, and hemp seeds.
