Sweet Potato and Sausage Breakfast Casserole

Slow cooker breakfasts are made for busy weekday mornings. This savory combination of sweet potatoes, chicken sausage and eggs is hearty and filling, and full of health-boosting nutrients.

INGREDIENTS

SERVES 4

  • 1 Sweet Potato (large)
  • 8 Egg
  • 1 lb Breakfast Chicken Sausage
  • 1 large Yellow Onion
  • 1/2 cup Shredded Cheese, Mild Cheddar

DIRECTIONS

1 Spray the inside of the slow cooker with nonstick vegetable oil spray.
2 Combine sweet potato, eggs (whisked), breakfast sausage, yellow onion, shredded cheese (optional).
3 Stir to combine. Cook on low for 8 hours.
