Sweet Potato Shepherd’s Pie

This sweet potato riff on the classic winter comfort food is a great way to get your shepherd’s pie fix. Sweet potatoes burst with vitamins A and C, and are a good source of potassium and fiber.

INGREDIENTS

SERVES 4

  • 1 sweetpotato , raw sweet potato
  • 1/8 tsp Kosher Salt
  • 1/8 tsp Black Pepper
  • 1 tsp Olive Oil
  • 1/2 cup Onions, Chopped
  • 2 clove garlic
  • 1/2 medium green bell pepper
  • 1/2 medium red bell pepper
  • 1/2 Whole Yellow Bell Pepper
  • 1 lb Lamb, New Zealand, imported, ground lamb, raw

DIRECTIONS

1 Set a pot of water to boil on the stove.
2 Preheat oven to 400 degrees Fahrenheit.
3 Cut sweet potato lengthwise, then quarter. When the water boils, add salt and add the sweet potatoes. Cook sweet potatoes 10-12 minutes, drain and air dry. Mash with a fork, spoon or masher and season with salt and pepper. Set aside.
4 Warm a large saute pan over medium-high heat. Add olive oil and wait for it to ripple, then add onions and cook 2-3 minutes until they soften. Add garlic, peppers, salt and pepper and cook another 3 minutes.
5 Add ground lamb, making sure to separate as much as possible. Cook 5 minutes, stir to combine the ground lamb with the onions and peppers and remove from heat.
6 Fill a 9-inch baking dish with high sides with ground lamb mixture. Use a spatula to top and smooth out the mashed sweet potato on top. Cook for 45 minutes and let cool 5 minutes.
7 Serve garnished with julienned parsley.
