This salad has lots of filling fiber from lettuce, beans, and brown rice, plus a serving of complete protein.

2 cups chopped romaine lettuce

1/2 cup canned black beans

1/3 cup cooked brown rice

1/4 cup frozen corn kernels

1 cucumber(s)

1/2 cup cherry tomatoes

1/4 medium avocado

2 tsp plain low-fat Greek yogurt

1/4 lime

1 dash salt and pepper
DIRECTIONS

Place romaine, beans, rice, corn, cucumbers, tomatoes, and avocado in a bowl. Set aside.

Mix together yogurt, juice from the lime, salt and pepper.

Toss salad with yogurt lime dressing.
