Tagine-Style Instant Pot Chicken with Lemon, Green Olives and Garlic

Chicken is a low-fat source of protein (3 oz chicken contain 27 grams of protein) with fewer unhealthy qualities than other meats. Plus, it’s nutrient-rich, containing vitamin B6 for insulin production, vitamin B3 for converting carbs to energy and selenium, a cancer-fighting antioxidant.

INGREDIENTS

SERVES 2

  • 2 and raw boneless, skinless chicken breast
  • 1/4 tsp Sea Salt
  • 1/4 tsp Ground Black Pepper
  • 1 medium White Onion
  • 6 clove garlic
  • 10 Manzanilla Olives
  • 2 cups Chicken Broth
  • 1/3 cup Lemon Juice
  • 1 cup Couscous
  • 2 leaf fresh mint leaves
  • 1 fruit lemon

DIRECTIONS

1 Press "Sauté" and let bottom of pot heat up. Season both sides of each chicken breast with salt and pepper. Spray pot with cooking spray then add chicken and sear each side 2 minutes. Add chopped onion and garlic and cook until translucent (about 2 minutes).
2 Add olives, chicken broth and lemon juice and deglaze pan.
3 Close lid then turn release valve to “Sealed” position. Press "Manual" and set at "High Pressure" for 10 minutes.
4 Fill a small pot on the stove with 1 cup water. Add pinch of salt, cover and bring to a boil. Then add 1 cup couscous, cover and turn off heat. Let sit 5 minutes then toss with fork and keep covered until ready to serve. When timer goes off, turn vent on lid to release steam then open when venting is complete.
5 Thinly slice chicken, portion 1 chicken breast and half couscous in each bowl. Drizzle reserved sauce, olives, onions and garlic over chicken and couscous. Garnish with 3 lemon supremes in each bowl and mint, then serve.
